Quinoa Walnut Tacos with Mango Salsa and Nacho Sauce

I know the title of this post seems odd, but trust me, you’re going to want to make these! Let’s get right to it:

INGREDIENTS:

For the Taco Filling

*1 Cup uncooked quinoa

*1 Cup plain chopped walnuts (not salted or seasoned)

*2 Cups water

*1/2 of an onion diced finely

*2 tbs cooking oil (I like to use avocado oil)

*Cumin, salt, chili powder, pepper to taste (the amount is up to you! I like mine a little bit milder, so I use a pinch, but you can use as much or as little as you like.0

For the Salsa

*1 Ripe Mango cut up very small

*1 Avocado cut up very small

*1 Tomato cut up very small

*Juice of 1 small lime

*Pinch of salt

*Cilantro

For the Nacho Sauce

*2 Small potatoes

*1 Large carrot, peeled

*2 tbs Nutritional yeast

*1/2 tsp Salt

*1 tsp Chili powder

Other:

Taco delivery system: i.e. hard taco shells, tortilla shells, etc. I used street taco tortillas!

DIRECTIONS:

  1. Begin by heating the oil in a medium pot. Then add your chopped onions. Cook until translucent. Then add the chopped walnuts. Let cook, stirring often for about 5 minutes.

  2. Rinse your quinoa in a mesh strainer, then add to the pot of onion and walnuts. Stir and let quinoa toast for 5 minutes, then add the water. Cover, reduce heat to low-medium and let simmer for 20 minutes.

  3. Bring a pot of water to a boil, and add peeled potatoes and carrots. Once fork-tender, add to a high powdered blender (best is a vitamix if you have one) along with 1/2 cup of the water used to boil and the seasonings (nutritional yeast, salt, and chili powder). Blend until creamy.

  4. Make your salsa by combining all ingredients and stirring together gently.

  5. Assemble your tacos! Spoon out some of the taco filing into your taco shell or tortilla, add the nacho sauce and the salsa. I added a dollop of dairy free sour cream and a sprinkle of Tajin seasoning to mine!

These are super healthy as walnuts are full of Omega-3s which support brain health and a healthy gut! Quinoa is high in protein and is contains all 9 essential amino acids!
