Vegan Orange Tofu with Cashews

Remember ordering a giant greasy bag of orange chicken from your local chinese restaurant? Well, now you can have it vegan! This dish is a perfect comfort food (but healthier!) to eat while lounging in your baggy pants and binge watching old movies. Hey, invite a few friends over and make it a big ‘ol nostalgic party! Nintendo anyone?

INGREDIENTS:

*1 block extra firm tofu

*1 cup orange juice

*1/2 cup cane sugar

*2 tbs soy sauce

*2 tbs vinegar (you can use either white vinegar, rice vinegar, or apple cider vinegar)

*1/4 tsp grated ginger (or powdered if you don’t have fresh

*1 tsp minced garlic

*2 tbs cornstarch

*Sesame Oil

*Salt

*1/4 cup cashews

DIRECTIONS:

  1. Drain and press your tofu to release excess water.

  2. In a medium saucepan, mix all sauce ingredients (except for the cornstarch) and simmer on medium until it begins to bubble.

  3. In a separate dish, combine cornstarch with 4 tbs water and mix. If you just add the cornstarch without mixing into the water, it will clump up in your sauce.

  4. Reduce heat to low and add cornstarch/water mixture.

  5. Cut your tofu however you like (cubes, slices, triangles) and drizzle with sesame oil and sea salt.

  6. Cook your tofu. Now, you can use an air fryer to sort of just set it up and walk away while it cooks, or you can fry in a pan. You can even bake it if you want! Either way, cook it up until it’s crispy and browned.

  7. Once tofu is cooked, serve on top of rice and ladle on some of your orange sauce. Then top with cashews. I garnished with garlic chives for an extra bit of flavor and aesthetics.
