Peanut Butter Caramel No Bake Bars

If you are watching your calories, or trying looking for a healthy snack…these are NOT it. But if you are looking for an indulging, sweet treat, then these are for you!

These are extremely dangerous. I almost ate a whole pan in a day, and I’m not ashamed. I’m just gonna get right to it so you can get in the kitchen and make these. The sooner you make them the sooner you’ll thank me.

INGREDIENTS:

*1/2 cup vegan butter (I used Earth Balance)

*3/4 cup light brown sugar

*1 cup white sugar (I used raw organic cane sugar)

*1 cup peanut butter

*1 tsp vanilla extract

*1/2 tsp salt

*2 1/2 cups quick oats

*1/2 cup vanilla soy milk (or any other plant milk)

DIRECTIONS:

  1. In a medium saucepan, melt butter and sugars, stirring constantly until you get a caramel-y color.

  2. Add milk and let boil for about 1 minute.

  3. Remove from heat and stir in peanut butter until melted, then add vanilla and oats.

  4. Spoon out into a parchment lined 8x8 baking dish and spread out evenly.

  5. Put in the fridge for at least 4 hours. I tried to take them out earlier and they were too sticky to cut.

  6. Once cooled completely, cut into bars. Enjoy!

Store in the fridge.
