Stuffed Quesadillas

Quesadillas are a simple food to make and eat. Most people only want cheese or chicken in their quesadillas, well I’m a little extra so I grabbed a bunch of stuff from the pantry and fridge to create these stuffed beauties!

INGREDIENTS:

*Tortilla shells

*Black beans (drained & rinsed)

*Black olives

*Seasoned cauliflower (cumin, chili powder, salt, pepper)

*Cooked lentils

*Dairy free cheese (like Daiya or Follow Your Heart brands)

*Spanish style rice ( I used a microwaveable pouch from Seeds of Change)

*OPTIONAL: Avocado, lime, sour cream, salsa, green onion

DIRECTIONS:

  1. In a small pot, add 1 cup of water and a handful of chopped cauliflower. Let cook until tender and add seasonings. Add Black beans and stir.

  2. Spread vegan butter one side of two tortilla shells.

  3. Butter side down, add your ingredients (be sure to add lots of cheese so it sticks together!), then top with other tortilla shell butter side up.

  4. Flip once bottom tortilla shell has begun to brown. Remove from heat once both sides are golden brown.

  5. Cut into triangles and serve with optional ingredients!

Easy and tasty! Get creative and add some different ingredients, being in the kitchen should bring our your creative side!
