Chickpea Salad
Easy to throw together for any meal, potluck, or picnic! Chickpeas (also known as garbanzo beans) are legumes that are a good source of protein and dietary fiber. They’re easy to find in any grocery store, as well as easy to prepare for a quick meal!
Making them into a cold salad is one of my favorite meals and it will be one of your favorites, too!
INGREDIENTS:
(Serves 2)
*1 Can chickpeas
*1/4 cup vegan mayo (or use pureed avocado for an oil free version)
*1 cup cooked quinoa or wild rice
*1 Tbs nutritional yeast
*1/2 tsp turmeric
—-The following ingredient measurements are up to you! Add as much as you like!
*Halved black olives
*Chopped cucumber or zucchini
*Chopped carrots
*Chopped celery
*Salt/Pepper to taste
*Minced garlic (optional)
*Finely chopped onion (optional)
DIRECTIONS:
Drain and rinse the canned chickpeas
Add chickpeas to a medium bowl and add remaining ingredients.
Mix until mayo/avocado has evenly coated ingredients.
Serve and enjoy!
THAT’S IT! Super simple, super tasty, super nutritious and filling! Double, triple, quadruple this recipe to take to a party or to keep in the fridge for lunch all week! You can even spoon some into a tortilla or spinach wrap to make it easy to eat one-handed!
